This week at our house I’m doing pretty quick and simple dinners because things are just crazy busy right now. Last night, we had just plain old spaghetti, which hopefully no one needs a recipe for! It made me think though, I had made this baked spaghetti before that was to die for, so I dug back through my recipes and found it to share with y’all.

This recipe is a tiny bit more time consuming than whipping up plain old spaghetti, but still not too terribly bad if you plan ahead. It is delicious and would be something perfect to take to a family gathering or potluck of some sort and can definitely help feed a crowd.

Hope you try it out and enjoy!

This week I made fettuccine alfredo with steak and it was delicious. I used sirloin for ours because I was serving 4 of us and that is just what I happened to have available to feed the 4 of us at the time. Please note that this recipe is to serve 2, so you will need to adjust measurements if you’re planning to serve more people.

You will definitely want to choose the right cut of meat because while the sirloin was fine, and fed us all, it just wasn’t the most tender and flavorful choice obviously. I think a ribeye, or a filet mignon would be the best option flavor-wise, but it just depends on what works for you!

I also wasn’t very exact with some of the measurements this week because this is a meal that will definitely depend on you. You’ll decide which cut of meat to serve, how much you’ll eat and then a lot of my seasoning I did to taste this week. So, play with it to meet your needs and enjoy!!

This week Spring is in the air and the weather has been so beautiful I wanted something different, so we tried out this sweet stir fry recipe and it did not disappoint! It was so simple to make and ready in no time.

I think you could use whatever cut of meat you prefer for stir fry, but I like flank steak and prefer to cut it against the grain in about 1 or 1 ½ inch strips…just my personal preference.

I served this over brown rice and with a fresh green salad, perfect for the warmer weather.

Enjoy!!
